Chicken Quesadillas
This Chicken Quesadillas recipe is a family favourite. Packed with nutritious ingredients and bursting with flavour, this dish is perfect for families and picky eaters alike. A great hands-on meal for all seasons, this is a definite crowd-pleaser.

Ingredients
- 2 onions, chopped
- 8 tomato, chopped
- 3 chopped green and red capsicum
- 2 kgs chicken
- 2 curry powder
- 3 tbs paprika powder
- 3 tbs Italian mix herbs
- Cheese
- Nuttelex butter
- Wrap (tortilla)
Instructions
- Take a baking tray, add chicken, sprinkle onion, capsicum, curry powder, paprika powder, Italian mix and chopped tomato. Cover with aluminium foil and make a little hole using a fork. Place in the oven for 30 minutes at 200 degrees.
- Once the chicken is cooked, cut into small pieces.
- Take a wrap and spread chicken and sprinkle cheese. Fold the tortilla over to form a semi-circle and cook for 2 minutes or until golden and heated through on the pan.
- Cut it into triangle shapes.
- Serve with mayo and enjoy!
