Zucchini Brownies

These delicious Zucchini Brownies contain the goodness of zucchini while still being sweet – the perfect snack for even the fussiest eater. Tried and tested at our Centres, these brownies are fudgy and chocolatey – the perfect morning or afternoon tea snack.

This recipe was provided by our wonderful Educator Samantha at Guardian Thurgoona.

Ingredients

  • 1 ½ cups raw sugar
  • ½ cup vegetable oil
  • 2 tsp vanilla essence
  • 2 cups self raising flour
  • ¼ cup cocoa
  • 2 eggs (2 Tbsp apple puree substitute)
  • 1 tsp salt
  • 2 Zucchini finely grated
  • 1 cup of choc chips (vegan chocolate)
  • 3 Tbsp icing sugar (to garnish)

Instructions

  1. Preheat oven to 160 degrees fan-forced.
  2. Line a 20cm x 20cm baking tray with baking paper.
  3. In a bowl, combine sugar, oil, vanilla, flour, cocoa, eggs and salt.
  4. Stir in zucchini and chocolate chips until combined.
  5. Pour into baking tray.
  6. Bake for 30-35 minutes or until cooked through.
  7. Once cooled, sprinkle with icing sugar.
