Vegetarian Korma with Rice
Our hearty and healthy Vegetarian Korma with Rice is a fresh and nutritious taste sensation. Tried and tested by hundreds of children at our Centres, it’s a family friendly recipe that is a favourite with adults and children alike.
This recipe was provided by our wonderful Chef Jade at Guardian Manly.
Ingredients
- 2x tbsp minced garlic
- 1x diced onion
- 2x tbsp minced ginger
- 2x tbsp Ayam Korma paste
- ½ bunch of fresh coriander
- 2 carrots, sliced
- 1 head of broccoli
- 1 head of cauliflower
- 1 zucchini, sliced
- ½ butternut pumpkin, diced into 1cm cubes
- ¼ cup thickened cream
- 2x 400ml tins of coconut milk
- Rice to serve
Instructions
- Saute garlic, onion and ginger with the chopped root of the coriander.
- Mix in Korma paste.
- Add vegetables.
- Add cream and coconut milk. Mix through all ingredients and cover. Simmer for 20 mins, or until vegetables are tender.
- Serve with steamed white or brown rice, garnish with fresh coriander leaves.
