Teriyaki Chicken Poke Bowls

Our Teriyaki Chicken Poke Bowls are the perfect easy and nutritious lunch option for children and adults alike. Bursting with flavour, and easily customisable to your child’s tastes, they’re fun to make and enjoy together!

Ingredients

  • 1kg diced chicken (this preferred)
  • 1 x Cucumber
  • 1 x Carrot
  • Pineapple in natural juice (keep the juice to use later)
  • Edamame beans
  • Brown Rice

Garnishes:

  • Spring onions
  • Sesame seeds
  • Nori seaweed
  • Mayo

Teriyaki marinade/sauce:

  • ½ cup soy sauce
  • 1/3 cup pineapple juice
  • 3 Tbs honey
  • 1 Tbs rice wine vinegar
  • 1 tsp sesame oil
  • 1 tsp fresh ginger
  • 2 cloves crushed garlic
  • 1 Tbs sesame seeds

Instructions

  1. To make the marinade, place all of the ingredients in a pot and simmer until sauce is slightly thickened or coats the back of a spoon. Remove from the heat and set aside.
  2. Coat the chicken in the marinade. This can easily be done overnight, or prepped ahead of time and frozen in portions.
  3. If you don’t have time to make Teriyaki sauce, there are many store-bought options out there that can easily be substituted.
  4. Cook your chicken. Bake it in the oven for 25 minutes at 180 degrees stirring every 5 minutes. Alternatively, air fry at 180 degrees for 16-20 minutes, pausing once to stir.
  5. Cook rice according to packet instructions. To cut down time, try using shelf ready 90 second microwave brown rice.
  6. Slice, dice or chop your veggies however you like. For younger children, grating or steaming carrot makes it easier to eat.  For older kids, they might like crunchy batons of veggies on their plate. For adults, julienne the vegetables to really impress!
  7. If you need to use whatever you have in the fridge at the time, or frozen or tinned veggies are all you have on hand, try this easy suggestion to build your poke bowls:
    • Pick something green like cucumber, broccoli, broccolini, peas, edamame, spinach or broad beans
    • Pick something crunchy like carrot, radish, celery, capsicum, sugar snap peas or snow peas
    • Pick something sweet like pineapple, sweet corn or roasted pumpkin
  8. Assemble your Poke Bowl! Pile in some rice, top with chicken, carrot, cucumber, pineapple and edamame. Then sprinkle on sesame seeds, spring onion, chopped up nori and drizzle with mayonnaise.
