Sweet Potato and Tofu Vegetable Curry

Full of veggie goodness, flavour and colour, this Sweet Potato and Tofu Vegetable Curry is flavoursome and beloved by children at our Centres.

This recipe was provided by our wonderful Cook Sonja at Guardian Gungahlin.

Ingredients

  • 2 zucchinis
  • 2 carrots
  • 1 packet of soft tofu, diced
  • 2 sweet potatoes, diced
  • 1 small pumpkin, diced
  • 250g baby spinach, diced
  • 4 L chicken or vegetable stock
  • 3 tablespoons curry powder
  • 3 onions, diced
  • 3 tablespoons plain flour
  • 3 tablespoons Nuttlex
  • 3 packets of bow pasta

Instructions

  1. Melt Nuttlex in saucepan.
  2. Add flour and curry powder and mix well.
  3. Add stock and all vegetables. Cook until vegetables are tender.
  4. Boil pasta, drain and mix with vegetables. Enjoy!
