Strawberry Sorbet
This delicious and easy to make recipe for Strawberry Sorbet is a super refreshing snack on a hot day! Tried and tested on the children at our Blackburn North Centre, we think you’ll love it too.
This recipe was provided by our wonderful Cook Monte at Guardian Blackburn North.
Serves 4-6
Ingredients
- 2kg strawberries
- Zest and juice of 2 lemons
- 4tsp gelatin powder
- 1 ½ cups sugar
- 3 cups water
- Ice cream cones
- Rice cakes
Instructions
- Sprinkle gelatin powder into a cup of water in a small bowl and soak for 5-10 minutes.
- Place sugar and 2 cups of water in a small saucepan and bring to the boil. When sugar is completely resolved, remove from the heat. Add the soaked gelatin and mix well until dissolved.
- Place washed and hulled strawberries in a bowl and use a stick blender to process into smooth puree. Add some lemon juice and zest.
- Gradually add the sugar mixture as you keep blending and combine well. Place the mixture into a container and place in the freezer for overnight.
- Take out the completely frozen mixture. Slightly warm. Cut into smaller pieces and process in a food processor until smooth. Return to the container and place in the freezer for 1 hour OR until firm.
- Serve in an ice cream cone or rice cake.
