Parsnip and Marmalade Muffins

Our Parsnip and Marmalade Muffins are a delightful sweet treat for children, and they’re so easy to make. A great snack for lunchboxes or morning and afternoon tea.

This recipe was provided by our wonderful Cook Meka at Guardian Mt Eliza.

Serves 80-100

Ingredients

  • 3 medium size parsnips 100ml (finely grated)
  • 3 jars marmalade (450 g jars)
  • 100g soft brown sugar
  • 300ml vegetable oil
  • 2kg flour
  • 25ml vanilla essence
  • Milk substitute for consistency
  • Granulated brown sugar

Instructions

    1. Soften grated parsnip in covered microwave bowl with ½ cup water, stirring occasionally.
    2. Once cooled, combine parsnip, marmalade, oil, sugar and vanilla essence.
    3. Add flour and mix, adding milk substitute if mixture is too dry.
    4. Spoon a large tablespoon of mixture in each muffin case.
    5. Sprinkle with brown granulated sugar.
