Nut-Free Pesto Pasta

This Nut-Free Pesto Pasta recipe is a favourite among our fussy eaters. Full of nutritious ingredients and bursting with flavour, this dish is perfect for families. It’s been tried and tested by children at our Centres, ensuring it’s not only healthy but also loved by our little ones.

This recipe was provided by our wonderful Chef Tania at Guardian Sydenham.

Serves 150

Ingredients

  • 500g Spinach Leaves
  • 6 Bunch Basil
  • 1 Bunch Parsley
  • 600mls Olive oil approx.
  • Salt pepper to taste
  • 1 tbsp minced Garlic
  • 8kg pasta
  • 10 punnets cherry tomatoes

Instructions

  1. In a blender add all herbs, salt pepper, garlic.
  2. Blend till smooth. Add the oil slowly to form a fine paste. You will have to do this in batches. Test for seasoning.
  3. Cook pasta, add tbsps. of pesto till desired. Mix in chopped cherry tomatoes.
