Filipino Chicken Arroz Caldo

Ingredients
- 1 tbsp Canola Oil
- 200 grams Chicken Breast
- 1 pc onion (diced)
- 3 cloves Garlic (minced)
- 4 tbsp Ginger (peeled and minced)
- 100 grams Mushroom (sliced)
- 2 cup Glutinous Rice
- 8 cups of Chicken Broth
- Salt and Pepper to tasteToppings
- Spring Onion
- Alfalfa Sprout (or Mung Bean Sprout)
- Calamansi (or Lemon)
- Egg (optional)
- Fried Crispy Garlic Slice
Instructions
- Clean the chicken, rinse and drain well.
- In a pot over a medium heat, pour the oil.
- Once the oil is hot, add onion, garlic and ginger. Cook and stir until everything is soft.
- Add the chicken and let it cook. It will take around 7 to 10 minutes or when the chicken is a bit brown in colour.
- Add the rice and mushroom. Stir regularly to prevent it from burning for 5 minutes. Add your stock and mix it a bit and let it simmer for 10 minutes.
- Add salt and pepper and simmer again until you reached the consistency you want. It should a bit thick.
- Put in a serving bowl and add the toppings you like. Enjoy your Filipino Chicken Arroz Caldo!
