Coconut, carrot and orange cake

Try our delicious Coconut, carrot and orange cake recipe – filled with sweetness from the orange juice and carrots, it’s moist and nutritious, and will have the children coming back for seconds! Morning or afternoon tea is covered with this delicious cake, tried and tested on children at our Centres.

This recipe was provided by our wonderful Chef Jade at Guardian Manly.

Ingredients

  • 1 egg
  • ¼ cup coconut oil
  • ½ orange juice
  • 1 tsp orange rind
  • 2 carrots, grated
  • 1 cup wholemeal flour
  • 1 tsp baking powder
  • 1 Tbsp chia seeds

Instructions

  1. Pre-heat oven to 205 degrees.
  2. Mix flour and chia seeds together.
  3. Blend egg, oil, orange juice and carrot separately.
  4. Mix the wet into the dry and add the baking powder.
  5. Bake in a loaf tray for 24-30 minutes.
  6. Enjoy.
