Chocolate Zucchini Balls

Our Chocolate Zucchini Balls are the perfect tasty and nutritious snack. Tried and tested on children across our Centres, they’re easy to make and taste delicious!

This recipe was provided by our wonderful Cook Angela at Guardian Underwood.

Ingredients

  • 1/2 cup melted Nuttlex (or butter substitute)
  • 1 tbsp vanilla extract
  • 2 cups self raising flour
  • 1/2 cup cocoa
  • 1 cup sugar
  • 1 tsp salt
  • 3 cups fine grated zucchini (not drained)
  • Desiccated coconut

Instructions

  1. Mix all wet ingredients together.
  2. Add dry ingredients and mix well.
  3. Let mixture sit for approximately 5 minutes.
  4. Pour into a lined pan, approx 27cm x 17cm.
  5. Bake for 35 minutes at 175C or until skewer comes out clean.
  6. Once cooked, set aside in the pan to cool.
  7. Once cooled, crush the slice in a bowl with approximately 1tbsp melted butter (or butter substitute).
  8. Use a tablespoon measure to scoop the mixture and shape into balls.
  9. Roll in desiccated coconut and serve.
