Choc muesli with berry yoghurt

Our delicious choc muesli with berry yoghurt recipe combines the goodness of oats with fruit and natural sweetness. A wonderful breakfast option to start the day right!

This recipe was provided by our wonderful Chef Kate at Guardian Kellyville.

Ingredients

  • 2 cups rolled oats
  • 1 cup puffed rice
  • 1 cup desiccated coconut
  • ¼ cup honey
  • ¼ cup neutral oil
  • 2 tablespoons cocoa powder
  • Natural yoghurt, fresh or frozen strawberries and blueberries, to serve

Instructions

    1. Combine oats, rice and coconut in a large bowl.
    2. Heat honey and oil in the microwave until warm. Whisk in cocoa powder. Add to oat mixture. Toss to coat.
    3. Spread in a thin layer on an oven tray lined with baking paper.
    4. Cook in oven at 160C until toasted and dry. Cool on trays. Store in an airtight container.
    5. Serve muesli sprinkled over yoghurt with berries.
