Chicken Sausage Curry with Mashed Potatoes
This Chicken Sausage Curry with Mashed Potatoes recipe is chock full of flavour, and is the ultimate comfort food. Enjoy with creamy mash, naan bread or rice. Tried and tested on children at our Centres, this is a winning recipe for the whole family.

Ingredients
- 1kg chicken sausage
- 300g brown onions, chopped
- 300g fresh tomatoes or 250g diced tomatoes
- 2 Tbsp minced garlic
- 1 Tbsp coriander powder
- 1 Tbsp cumin powder
- 2 Tbsp curry powder
- 1 Tbsp cumin, whole
- 2-3 bay leaves
- 5 Tbsp oil
- 1 Tbsp salt
- ¼ bunch fresh green coriander
Instructions
- Preheat oven to 200C and cook the sausage in a baking tray for 15-20 min and allow it to cool down.
- Heat oil in a pot. Add cumin whole and bay leaf, let it crackle then add the chopped onions and cook the onions until they are a light golden brown colour. Add minced garlic and sauté for 2-3 min.
- Add cumin powder, coriander powder, curry powder and salt and add chopped tomatoes or diced tomatoes and cook well for 4-6 minutes.
- Add 400 ml of water and once boiling, simmer for 10-15 minutes.
- Add the sliced sausage and cook for 6-8 min on low to medium heat.
- Garnish with fresh chopped green coriander and it’s ready to eat with your choice of mashed potato, naan or rice.
