Chia Seed Chocolate Pudding

This Chia Seed Chocolate Pudding recipe is a must-try. It’s full of flavour, crafted with love and adored by the children at the Elsternwick Centre. Naturally sweet and nutritious, this healthy snack or dessert is sure to become a family favourite.

This recipe was provided by our wonderful Chef Daniel at Guardian Elsternwick.

Ingredients

  • 4 cans Coconut Milk
  • 1 kg Chia Seed
  • Cocoa powder
  • Vanilla essence
  • 4 tbsp Cinnamon powder
  • Pinch of Salt
  • Honey / syrup
  • Fresh fruit

Instructions

  1. In a big bowl, mix coconut milk, cocoa powder, honey, cinnamon, vanilla essence, and a pinch of salt until combined to avoid lumps.
  2. Once all the ingredients are mixed, platter in your preferred bowl, cover and place in the fridge overnight, or for at least 3-4 hours. The chia pudding is ready when it is thick and no longer watery.
  3. Serve with the fruit of your choice (raspberries, banana or blueberries), or shredded coconut.
