Chia and Oat Cookies

Delicious and filled with nutritious ingredients, these Chia and Oat Cookies are the perfect morning or afternoon tea snack. Great for the whole family, and loved by fussy eaters, these cookies are easy to make and will have the children coming back for more!

This recipe was provided by our wonderful Chef Jade at Guardian Manly.

Ingredients

  • 3 Tbsp chia seeds
  • 1 tsp salt
  • 2/3 cup coconut sugar
  • 2 ½ cups rolled oats
  • ¼ cup wholemeal flour
  • 1 tsp cinnamon powder
  • 2 tsp bicarb soda
  • ¾ cup apple sauce
  • ½ cup cranberries
  • 1/3 cup coconut oil

Instructions

  1. Pre-heat oven to 175 degrees, line baking tray with baking paper.
  2. Mix all dry ingredients, except the cranberries.
  3. Add the apple juice and oil into the dry mix and form a dough-like texture.
  4. Fold through the cranberries.
  5. Portion out the dough into evenly sized balls and place on tray (this mixture should make about 16).
  6. Bake for 10-15 minutes until golden brown.
  7. Cool on tray for 10 minutes.
  8. Enjoy!
