Butter Chicken

Butter chicken is a great way to start to expand children’s tastes while serving up an easy-to-eat dish that works for all ages.

This recipe was provided by our wonderful Educator Jessica at Guardian Howlong.

Ingredients

Marinade

  • 750g chicken
  • ½ cup coconut yoghurt
  • 1 Tbsp lemon juice
  • 1 tsp turmeric powder
  • 2 tsp garam masala
  • ½ tsp chili powder
  • 1 tsp ground cumin
  • 1 Tbsp ginger
  • 2 cloves garlic

Curry

  • 2 Tbsp butter or vegetable oil
  • Onion
  • 1 cup tomato passata
  • 1 cup coconut cream
  • 1 Tbsp sugar
  • 1 ¼ tsp salt

Instructions

  1. Combine all marinade ingredients in a bowl. Cover and refrigerate overnight or minimum 3 hours.
  2. Heat a large frying pan with oil and brown the onion. Add marinated chicken and cook until the chicken is cooked through.
  3. Add the tomato passata, sugar, salt and coconut cream. Turn down to low and simmer for 15 minutes. Taste to see if it needs more salt.
  4. Cook 2 cups of rice.
  5. Garnish with coriander and serve with your rice of choice.
