Butter Chicken
Butter chicken is a great way to start to expand children’s tastes while serving up an easy-to-eat dish that works for all ages.
This recipe was provided by our wonderful Educator Jessica at Guardian Howlong.
Ingredients
Marinade
- 750g chicken
- ½ cup coconut yoghurt
- 1 Tbsp lemon juice
- 1 tsp turmeric powder
- 2 tsp garam masala
- ½ tsp chili powder
- 1 tsp ground cumin
- 1 Tbsp ginger
- 2 cloves garlic
Curry
- 2 Tbsp butter or vegetable oil
- Onion
- 1 cup tomato passata
- 1 cup coconut cream
- 1 Tbsp sugar
- 1 ¼ tsp salt
Instructions
- Combine all marinade ingredients in a bowl. Cover and refrigerate overnight or minimum 3 hours.
- Heat a large frying pan with oil and brown the onion. Add marinated chicken and cook until the chicken is cooked through.
- Add the tomato passata, sugar, salt and coconut cream. Turn down to low and simmer for 15 minutes. Taste to see if it needs more salt.
- Cook 2 cups of rice.
- Garnish with coriander and serve with your rice of choice.
