Brazilian Fish Stew

Our Brazilian Fish Stew recipe packs a flavour punch, and is a wonderful, healthy dinner that the whole family can enjoy together.

This recipe was provided by the wonderful Chef Kat at Guardian St Clair.

Ingredients

  • 1kg Basa Fish (or firm white fish) cut into 2-inch pieces
  • 1 Onion diced
  • 1 Red Capsicum diced
  • 1 Green Capsicum diced
  • 1 Tbsp Garlic minced
  • 1 Tbsp Ginger minced
  • 1 Tbsp Oil
  • 1 cup Lime Juice
  • 3 Tbsp Tomato Paste
  • 1 tsp Turmeric
  • 1 tsp Sweet Paprika
  • 1 tsp Cumin
  • 1 tsp Salt
  • 1L Coconut Cream
  • 1 cup hot water

Instructions

  1. Place the fish in a bowl, add the turmeric, sweet paprika, cumin and lime juice. Mix well and leave to marinate.
  2. In a large pan, heat the olive oil over medium-high heat. Add onion, garlic and ginger and sauté for 2-3 minutes. Lower the heat to medium, add the capsicum and cook for another 2-3 minutes.
  3. Add the fish, tomato paste, and salt. Mix, add water and bring to a boil. Cover and cook over medium low heat for 5 minutes or until the peppers are tender.
  4. Add the coconut milk and taste and add more salt if necessary. Cook gently until fish is cooked through, about 4-6 minutes. Taste and adjust salt and squeeze with lemon.
  5. Serve with rice, sprinkle with coriander or chives and a squeeze of lime.
  6. Drizzle with a little olive oil if you want.
