Aboriginal and Torres Strait Islander Children’s Day Cake

This Aboriginal and Torres Strait Islander Children’s Day Cake recipe is a fantastic way to celebrate indigenous culture in our Centres. Tried and tested by the children, it’s a delicious treat that also looks amazing.

Serves 4 to 6

Cake Layers

  • Top: Chocolate Cake
  • Middle: Vanilla Butter Cake
  • Bottom: Raspberry Cake
  • Buttercream: Native Rosella Buttercream

Ingredients

Vanilla Butter Cake

  • 175g unsalted butter, room temperature
  • 165g caster sugar
  • 2 tsp vanilla extract
  • 2 eggs, room temperature
  • 110g self-raising flour
  • 100g plain flour
  • 160ml milk
  • Yellow food colouring (optional)

Chocolate Cake

  • 110g plain flour
  • 30g unsweetened cocoa powder
  • ¼ tsp bicarbonate of soda

Raspberry Cake

  • 100g raspberries
  • 160ml milk
  • Red food colouring (optional)

Buttercream

  • 1 cup unsalted butter, room temperature
  • 2 cups icing sugar
  • Native Rosella syrup, to taste

 

Instructions

Vanilla Butter Cake

  1. Preheat oven to 180°C and line a rectangular cake tin with baking paper.
  2. Cream butter, sugar, and vanilla extract until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Fold in the flours and milk until combined, then add yellow food colouring if desired.
  5. Pour batter into the lined baking tray and bake for 25-30 minutes or until a skewer comes out clean.

Chocolate Cake

  1. Reduce the plain flour to 110g and add cocoa powder and bicarbonate of soda. Mix well.

Raspberry Cake

  1. Blend raspberries with milk. Adjust colour with red food colouring if needed.

Buttercream

  1. Cream butter until light and fluffy.
  2. Gradually add icing sugar, whisking until combined, and adjust consistency with Native Rosella syrup.

Cake Construction

  1. Once cakes have cooled, trim the tops to create even layers.
  2. Place raspberry cake on the bottom and spread with buttercream.
  3. Top with yellow vanilla cake and spread with buttercream.
  4. Add the chocolate cake on top and slice into portions.
